IMO I think a single is better, so much easier to and cheaper to maintain, plus unless you are going to have two separate fuel systems I do not see twins as a huge safety advantage over a single, performance wise I believe on that hull single will be better as well.

Saw that one on the hull truth, looks good for the year, curious what changes Pacific made since that year, I believe this one has a plastic tank for example.

I believe it is impossible to isolate the hull as the outboard is grounded and and attached to the hull, my Pacific is the same way. Just make sure you have the correct anodes installed on the engine and hull.

Based on the year was the original tank plastic? are you keeping the tank or putting in something different?

If Mercury is an option I would take the Mercury 150, probably the cheapest of the three, great dealer network and warranty and made in America by an American company. Cool video, those boats are definitely tough, good video for when people talk about how tough some NON ALLOY boat is. Those mud motors are really cool, always blown away at how fast they can move a boat like that is only a few inches of water.
