NW Seafood Stew

I promised Gypseas (Capt. Adrian) that I would give him some family recipes. Here is the first.

Grandma Carol’s Fisher Girl Stew
1 tablespoon olive oil
1 large chopped onion
4 or more cloves of garlic
2 cans of crushed tomatoes with basil (28 oz)
1 cup of dry white wine
1 bottle of clam juice (8oz)
3 cups chicken stock
All the juice you can squeeze from one lemon
1 teaspoon dry thyme
3-4 bay leaves
1 teaspoon salt
1/4 teaspoon cayenne pepper (or more to taste)
Old Bay Seasoning (to taste)
1 pound of white fish cut to size you like (ling cod, rock cod, halibut)
½ pound of scallops (cut in half if they are really big)
1 pound jumbo shrimp (shelled and deveined)
20 or more clams in the shell, or mussels or both!
Any other seafood you like
¼ cup of parsley for topping

Sauté onion and garlic in olive oil in large pot. Add remaining ingredients except seafood and parsley. Reduce heat and simmer at least 20 minutes but longer is ok. Add seafood, cover, bring heat back up then simmer about 10 minutes. Lay fish chunks on top as last ingredient. Over cooking seafood will make it tough. Discard unopened clams and bay leaf. Option; add a cup of okra; you can substitute any seafood to use what is available.

Serve in large bowl, sprinkle parsley, with crusty French bread —serves 4-6

One of my favourites, seafood bouillabaisse... mouth is watering
