We were using live squid hooked onto 3/0 or 4/0 circle hooks. You do see single tail plastic grubs threaded on to the hooks. We also use circles with bucktail tied onto them.
How deep?
around 34 fat.
Rod and reel and line and leader and what weight sinker?
Calstar 670 or 700m and Penn Jigmasters w/power handles on the last hole, spooled with 65 or 80lb. braid, 2 hook rigs with 12 and 16oz. lead.

Some of the shrimp flies, plastic teasers and bare hooks we use
The bucktail flies are tied on Mustad ez baiter circle hooks 10/0
The bare hooks are Eagle Claw 197 circle hooks in 3/0 and 4/0. They come in "seaguard" and "black chrome" finishes
I mostly use the Eagle Claws because they are thinner wire and I believe that they penetrate more easily
The plastic grubs are threaded onto the hook for extra appeal.
We usually use whole squid to keep from hooking the smaller fish.
Sometimes stripped out fresh mackerel does the trick
We use two hook rigs.
The main line is 60lb. mono and the leader drops are 25-30lb. mono. Adjust the length of the drops so they will not hook each other
The two leaders are approx. 24" apart
I tie a barrel swivel to each end and another short piece of 30lb. to the weight with a doubled up surgeons loop (snap swivel also works)
I use an overhand knot for the bead stops, while my buddies use crimps for stops
I can't say that I've had any issues with the overhand knots with line breakage. I retie the rigs every other trip though
Here's a little trick that I do with the weight leader. I tie an overhand knot in the 30lb. to create a weak spot so I would only lose the weight instead of the whole rig should the weight get snagged in the rocks
These are the reels that I use, a Penn 505 Jigmaster that has 4-1 gears out of a Penn 500 and a Diawa Sealine 50H 4.2-1 gear ratio.
The handles are on the last hole for more leverage while cranking
We use 50, 65 or 80lb braid
This is my Calstar 700M with 16ozs to give an idea on the bend
We use rods with some tip action (not too stiff) but enough backbone to handle that kind of weight
